In commercial kitchens, an average of one-third of food produced is thrown away and wasted, although much of it would be perfectly edible. The reasons for this waste are often simple mistakes in production, such as too big portion sizes or buying wrong amounts of food. KITRO tries to help kitchen staff to identify those sources of waste with a digital smart bin system that automatically tracks food waste as it is thrown away. It is currently being tested in Switzerland, and in use in multiple collaborating businesses, all of which have significantly cut their waste.
Problem
Food waste is a global problem that affects about one-third of all food. The further down the value-chain food travels, the more energy, resources, and emissions are 'embodied' into the product, and are similarly wasted when this food is thrown away. Commercial kitchens, such as restaurants and canteens, throw away food of which approximately two-thirds is still edible. Sending this still edible food to landfill results in value and nutrient loss.
Solution
KITRO is an analytics tool to identify sources of food waste through digital monitoring of bins, The smart bin system measures the composition of food waste and allows kitchens to find out where they produce waste, and how much of it. This allows them to adjust processes to reduce waste, something that is in an operator's interest as food waste also has monetary costs. KITRO's goal is to disrupt the workflow of the kitchen as little as possible while delivering useful results.
